New restaurant with barbecue flair expected to open before Christmas in East Dallas

Smoky Rose appears to be an upscale barbecue joint, with dinner entrees running $12 to $24.

Barbecue -- the art of wood, smoke and fire -- is one of the oldest cooking techniques out there. But boy is it popular right now.

A new restaurant called Smoky Rose is expected to open Dec. 22 on Garland Road in East Dallas and will be serving "chef-driven plates," some made with smoked meat. Is this an upscale barbecue a la 18th and Vine BBQ? Maybe so.

A statement from the restaurant says Smoky Rose will have a "relaxed yet chic farmhouse interior." The menu comes from executive chef David Gauthier, who moved to Dallas for the job.

Patrons can order ribs, pulled pork, brisket, turkey and sausage by the pound.

The bulk of the menu, however, is entrees featuring smoked and grilled meat. The Pork Dish is a Niman Ranch pork chop served with root vegetables and an onion-apple velouté. (That's a sauce, barbecue folks.) There's also a smokehouse charcuterie board, a smoked salmon appetizer and smoked chicken wings, to name a few.

Another interesting tidbit: One of the owners is a Le Cordon Bleu grad who worked in operations for YUM Brands, the company that owns fast-food giants KFC, Pizza Hut and Taco Bell.
