Of the thousands of things humans have determined edible, or somewhat edible, cheese might be my favorite. But, so far my idea of "cheesemaking" involves driving to a store and trying to figure out if I want the one with the red peel-away part or the one with moldy-looking spots (not that one; never that one). If you're like me, this class is an incredible opportunity to learn more about one of life's finest delicacies. Oh, by the way, there's a tasting with paired wines, too? Count me in.

Learn how to make fresh mozzarella and ricotta. This event includes a behind the scenes tour of the Mozzarella Company followed by a hands-on cheesemaking class. A wine and cheese tasting concludes the afternoon and guests get to take home an apron and the cheeses they have made that day.

Classes are noon to 2 p.m. and 3-5 p.m., except noon-2 p.m. only on Feb. 4. Reservations are required. 214-741-4072. $75 per person.
