You've probably experienced the roller coaster of trying new food at the State Fair of Texas.
"Ew, what even is that ... well, I admit, I'm intrigued ... that mouth-feel tho ... yum? Yes, yum!"
Click, click, click up the metaphorical hill to a concessionaire booth and peruse the menu. Ponder, "Do I really want to spend that many coupons on something that sounds ... questionable when there's a Fletcher's Corny Dog stand right there?"
If that answer is yes, may we interest you in Kool-Aid Pickle Dilly Sangria? How about Bacon Brittle or Corn Dog Ale (with yellow mustard garnish)? Those are among 14 new recipes that will be available for purchase when the 2018 State Fair of Texas opens on Sept. 28.
These items didn't win the annual Big Tex Choice Awards back in August -- here are the details on the ones that did -- but these semi-finalists did snag coveted real estate along the Midway to peddle their odd, impressive and (potentially) unpalatable snacks.

Semi-finalist foods and drinks available for purchase at the 2018 State Fair of Texas:
Corn Dog Ale: An amber ale brewed to feature a "combination of subtle smokiness and spices evoke the flavor and aroma of a classic, delicious corn dog."
Orange Julia's Beermosa: Champagne flavored with orange Pixy Stix, Blue Moon Beer and vanilla ice cream. Served with a Pixy Stix-rimmed cup and a Pixy Stix straw.
Fried Elotes: Corn blended into a flaky pastry and fried until golden. Garnished with Mexican cheeses and served with creamy corn dip side.
Supra Stuffed Mini Sopapillas: Three sopapillas injected with strawberry cream cheese, dusted with cinnamon and sugar and drizzled with honey.
King Crispy Coconut Crab Sliders: Whole soft shell crabs dipped in our homemade coconut batter and fried until perfectly golden and topped with wasabi spiced Asian slaw and served on a King's Hawaiian bun. Served with a side of fried plantains, spicy Asian mustard and sweet and sour sauce.
Texas Thai Delight: Deep-fried mixture of sticky rice and coconut milk layered with mangos. Served on a stick and with sweet dipping sauce.
Pico Frito (deep-fried pico de gallo): Tomatoes, cilantro, onions, and jalapenos folded into an egg wrap paper and deep-fried. Served with a side of cilantro sauce.
Kool-Aid Pickle-Dilly Sangria: Pickle juice infused with Fruit Punch Kool-Aid and "allow[ed] to mingle" with pineapple, cherries and blueberries. When the "flavors are just right," added to white wine and topped with lemon-lime soda. Garnished with a Kool-Aid pickle spear. It's "sweet and salty with a fruity back-bone" and "a beautiful ruby-red color," according to a statement.
Southern Fried Chicken Nachos: Cheese, Ro-tel tomatoes and pico de gallo over tortilla chips topped with southern fried chicken tenders and fresh cilantro.
Fruity Dessert Nachos: "A bed of thin, crispy butter cookies, smothered in fresh strawberries, blueberries, and bananas" then drizzled with crème anglaise and Ghirardelli chocolate sauce and topped with whipped cream.
Bacon Brittle: Applewood smoked bacon flavored with bourbon "to create a smoky, sweet and salty flavor with a soft crunchy texture from the brittle," the statement says.
Frosty's Frozen Hot Chocolate: Ghirardelli cocoa mixed with milk and water and ice blended. Topped with whipped cream, chocolate sprinkles and a marshmallow and cherry garnish.
Cherish Erbert Champagne: Pixy Stix cherry sherbet Champagne blended with vanilla ice cream. Served with a Pixy Stix straw and powdered candy rim.
Fletcher's Cheezy Pup: Soft melting cheese on a stick dipped in Fletcher's famous batter and deep-fried.
The 2018 State Fair of Texas runs from Sept. 28-Oct. 21.
