Just one main ingredient at new State Fair of Texas stand: bacon

Ed Campbell and Theresa Rynell have eaten an outrageous amount of bacon over the past four months. Call it "research and development": The two are part of a team debuting a new concession stand at the State Fair of Texas called Baconation.

Baconation (said "bacon nation") will sell BLT nachos and a host of fried bacon-on-a-stick items: maple brown sugar bacon, coconut white chocolate bacon, and milk chocolate pecan bacon, pictured above.

It's the only dedicated bacon stand at the State Fair of Texas this year, confirms State Fair Spokeswoman Karissa Condoianis.

The concessionaires used to sell fried green tomatoes at their stand, located inside the air-conditioned Tower Building.

But bacon is so much sexier.

"We just feel like America loves bacon," says Rynell, director of marketing and creativity for the Ed Campbell Concession Company.

Campbell also operates the Old Mill Inn, the historic Fair Park occupant built in 1935. Campbell took it over in the '90s. Since then, his company has officed in Fair Park year-round, which means Campbell stays focused on the State Fair of Texas long before -- and after -- Big Tex takes up his post.

"It's truly a historical tradition," Campbell says of the fair. "I love to be part of the greatest special event not only in Texas but around the country. It's really wonderful to be here."
