Mongolian hot pot has become a staple of dining all over China. In fact, Little Sheep shares a name with a chain of more than 400 Mongolian hot pot restaurants that’s hugely popular in Asia. Check off items from a sushi-bar-style list and before long, portions of raw ingredients land on the table: plates piled high with thinly sliced meats; bowls of raw greens or mushrooms; platters of seafood, tofu or noodles. Drop ingredients into the broth just until they’re cooked, pull them out with a straining ladle, dip them in a sauce if you like, and eat. Leslie Brenner/Guide
