Bubble Hour: Half-off bubbles by the glass

Polished and confident, Adam Jones’ Sundance Square restaurant is one of the best dining addresses in Fort Worth. Chef Blaine Staniford, who has been heading the kitchen since the beginning, turns out some successfully snazzy appetizers, such as bison tartare with charred onion and pickled mushrooms, or Hawaiian prawns with charred oregano aioli and zucchini. Main courses can be somewhat uneven; you might want to play it safe with a terrific steak. A thrilling 38-page wine list, with markups that can be very reasonable (many are about double retail), offers something for everyone. Full bar. — Leslie Brenner/Guide
