Teiichi Sakurai’s tiny place in Sylvan Thirty, with standing room for just 13 to 15 inside, and room for a few more to stand at a counter on the patio, feels like a traditional Tokyo ramen shop. Order one of four ramens (including a special, which is cold ramen during summer) from the touch screen, customizing it with extra garnishes, if you like. Grab a spot at the counter and one of the chefs will pass it to you when it’s ready. The experience is meant to be quick and informal: If it’s not overly crowded, you’re in and out in 20 minutes or so. Tonkotsu ramen — hot noodles in a rich, porky broth — is the signature.
