Luxury chocolate shop Kate Weiser has opened in new Fort Worth development

Where there's a Neiman Marcus, there could be a Kate Weiser Chocolate.

"We like to follow Neimans," says Kate Weiser, the Dallas chocolatier who has a sweets shop inside NorthPark Center in Dallas, near Neiman Marcus. On Oct. 8, 2018 at noon, Kate Weiser Chocolate opens at the ritzy new Fort Worth development the Shops at Clearfork, near a Neiman Marcus.

The original Kate Weiser is located in Trinity Groves in West Dallas. (And notably, there's no Neiman Marcus there. Not yet anyway.) Weiser's chocolate shop helped her become one of the better-known young females growing a business in the Dallas food scene. Travel + Leisure called her bonbons "almost too beautiful to eat."

You can see why: She sells colorful bonbons and candy bars that look like they were splatter-painted by a contemporary artist. Her team makes as many as 18,000 bonbons a week.

Weiser says the Fort Worth shop is a test: "Far enough away for us to test a new market but close enough to home base for us to not get overwhelmed." All of the chocolates will be made in the Trinity Groves kitchen in Dallas, then shipped to the tiny, 530-square-foot shop in Fort Worth.

If the shop is well-liked by Fort Worth customers, Weiser will continue opening Kate Weisers outside of Dallas. "We'll definitely continue to venture further and further out," she says, but didn't have specifics on where or when yet.

The opening is timed to the company's calendar, which spins into a Willy Wonka-like frenzy around the holidays when staffers make bonbons from 7 a.m. to midnight around Thanksgiving and Christmas.

Of all her inventive flavors — mango habanero, strawberry basil or pistachio gianduja, to name three — a blue bonbon called Cookie Monster is still the best-seller: vanilla bean ganache with cookie butter crunch.

Kate Weiser Chocolate is located at 5182 Marathon Ave., Fort Worth.
