In Wine Enthusiast magazine's list of America's 100 Best Wine Restaurants of 2018, three are from Dallas. That's an impressive number, especially since the entire state of Texas totaled seven restaurants on the list.

Nice work, Dallas sommeliers. (And you've got work to do, Dallas diners!)

Bullion

The French restaurant from chef Bruno Davaillon (formerly of the Mansion) is impossible to miss in downtown Dallas, with its gold-scaled exterior and floor to ceiling windows. Wine Enthusiast says the restaurant "feels modern and personal" and they especially liked sommelier and beverage director Andrew Schawel's all-French wine list. He's quoted as saying "I love to think of wine as a condiment for food."

When chef Stephan Pyles closed his eponymous restaurant in downtown Dallas, some diners seemed truly heartbroken. Pyles seemed energized: He was getting to design a new restaurant, both in food and feel. Wine Enthusiast calls the upscale Flora Street "a food-and-wine must," with a wine list that includes family-run labels.

It's back. After being closed for renovations, one of Dallas' most spectacular dining rooms has returned with a more modern interior. The French Room's general manager Anthony Cournia says he hopes diners "are now empowered to engage with the sommelier and not be intimidated by wine selections."

Other Texas restaurants that made Wine Enthusiast's list are Fredericksburg restaurant Cabernet Grill; and three in Houston: One Fifth, Pappas Bros. Steakhouse and Xochi.
