Ramen shop called R&B headed to downtown Dallas in 2018

This just in: A ramen shop will open at the Statler Hilton hotel in downtown Dallas in 2018. It'll be neighbors with a host of restaurants and bars at that redeveloped property.

[Update on Dec. 22 at 10 a.m.: The name of the new restaurant is R&B, which stands for ramen and bao.]

Here's what we know: Chef Angela Hernandez, formerly of Top Knot in Uptown, will be the executive chef. She's also the top toque at Fine China, a Chinese-inspired restaurant that'll open at the Statler before the ramen shop does.

The restaurant will be casual and small, says Todd Conger, managing director of food and beverage operations at the Statler. It'll have 25 seats, plus a counter if you'd rather stand. The menu will be modest and will include bowls of ramen and bao, or steamed buns filled with vegetables and meat.

The Statler, which has been charmingly updated, is home to a diner called Overeasy and a speakeasy called Bourbon and Banter. The Statler Hotel is located at 1914 Commerce St., Dallas. The ramen shop will open at an undisclosed date in 2018.
