Coppell family welcomes guests into their home at George coffeeshop, now open

When you walk into George | Coffee + Provisions, a new shop in Old Town Coppell, it almost feels like home. That's because it is: Owners and proprietors Christian and Laura Hemberger live upstairs.

George is located on the first floor of a white, country-style home located across Houston Street from the Coppell Farmers Market. The Hembergers' two sons, Jett, 5, and Spencer, 10, are often running around the main cafe area or helping bake scones in the kitchen.

With roasting partner Edison Coffee Co., George serves coffeeshop classics such as drip coffee, cold brew, Americanos, macchiatos, cortados and cappuccinos. A staff favorite is the shakerato, a shot of espresso with cream and sugar that is poured over ice and shaken.

Also on the menu are a variety of lattes, hot or iced, with an option of mostly-housemade syrups (with the exception of Maya chai for a chai latte, and sweetened condensed milk for the white shadow latte, which is compared to a creamy white mocha). The Honey & Vanilla latte, made with local Texas honey and syrup soaked in Madagascar vanilla beans, is the shop's bestseller so far.

In a close second is the La La Lavender latte, whose name holds close meaning to the shop's owners. During the Hembergers' wedding, Laura had a lavender bouquet, and her nickname is La La. Cue the awws: Christian and Laura celebrated their 15th anniversary assembling shelves for the shop.

Both kids and adults will enjoy another menu specialty: Spencer's Special Hot Cocoa, a drink created by the family's oldest son. Since Spencer has a dairy allergy, the hot cocoa is made with almond milk. Ghirardelli chocolate chips and cocoa are used to make the decadent mocha sauce.

Teas, lemonade, chocolate milk and a selection of grab n' go bottles of kombucha are also available at George, as are scones, oatmeal cookies and blueberry muffins.

The layout of the shop is broken up into seating areas that cater to differing atmospheres. A main cafe, with table seating and a couch area, is in the center of the coffeeshop buzz. Other spaces include the carriage house, a more intimate back room, and the library, which accommodates kids, with its mini lounge chair and childrens books.

Kids are certainly welcome: You'll spot plenty of little ones ordering Spencer's Hot Cocoa or cooling off with a lemonade after a day at the splash pad across Houston Street.

George's courtyard also features a small garden, bean bag toss games and fairy lights that illuminate the outside gathering area during evening hours.

From latte art to minimalistic decor and a country-style exterior, George is very Instagrammable, too.

The name of the shop is intimately intertwined with the city and the family. George is a family name for the Hembergers, plus, it's the name of George Coppell, who the city is named after. In Greek, George also means earth worker. 

"We wanted to honor the Earth and what it provides for us. It's our way of appreciating everything from the coffee plant to the farmers and even to the Farmers Market across the street," Christian said.

Expect an extended menu of more food and drink options in the future. The shop is closed on Sundays.
