6 new spots coming to the same downtown Dallas address: A whiskey bar, bowling alley and more

When the historic Statler Hotel in downtown Dallas opens this fall, patrons will be able to dine at several restaurants, grab a drink at either the rooftop pool or cocktail lounge, hit the bowling lanes and perhaps even catch a concert.

Approximately 58,000 square feet of the hotel will be dedicated to entertainment, according to a statement Tuesday, including three restaurants run by local chef Graham Dodds, formerly of Wayward Sons.

Here's the rundown:

  • Scout is a sports bar-sounding concept featuring "a scratch American menu" with shareable items and craft beer on tap, according to a release. The 12,000-square-foot space will have multiple flat-screens, four bowling lanes, ping-pong tables, billiards and foosball.
  • Waterproof is a rooftop bar and lounge promising a pool and 360-degree views of downtown Dallas. It's located on the 19th floor of the hotel. Expect DJs to perform and "resort-style service" with craft cocktails.
  • Fine China will be a full-service lunch and inner spot with Pan-American fare, sake, Japanese whiskies, tea and communal seating.
  • Bourbon and Banter is a "underground cocktail lounge" -- code for speakeasy? -- promising an extensive bourbon and whiskey collection.
  • Overeasy is breakfast, lunch and dinner joint promising farm-to-table eats and a gourmet coffee bar that overlooks Main Street Garden.
  • Grand Ballroom is a catch-all 12,000 square feet that may host concerts and other large-scale events, such as weddings.

The concepts were designed by Dallas-based firm Epic F&B, a partnership between two other locally-based companies, Turn the Tables Hospitality and Plan B Group, Inc. The former is owned by Chris Zielke and Christopher Jeffers, who are also behind Dallas restaurants Bolsa, Smoke, Chicken Scratch and The Theodore, among others. Plan B is a design firm that worked on Velvet Taco and Pie Tap Pizza Workshop and Bar.

The Statler Hotel, which is 61 years old, sat vacant for more than a decade before crews began working on revitalizing it. The 19-story complex houses more than 200 apartments and 159 deluxe hotel rooms, according to Dallas Morning News reporter Steve Brown. The residential spaces opened in May and the hotel rooms are expected to open by 2018.
