Will customers crave chopped beef sandwiches in the middle of the night? Sonny Bryan's owners sure hope so. Its location in the medical district means hospital workers come and go at all hours of the day, as do family members and patients, says Dan Garduño, general manager at the Inwood restaurant.

He's already worked out the staffing to keep Sonny Bryan's open 24/7. The company will also have more security and lighting in the wee hours, the GM says.

The new hours apply only to Sonny Bryan's on Inwood; the remaining seven Sonny Bryan's restaurants in Dallas, Fort Worth, Richardson and the surrounding areas will continue to close every evening.

Once the new schedule kicks in May 10, managers at Sonny Bryan do not expect it will close until Thanksgiving. (The three company holidays are Easter, Thanksgiving and Christmas Day.)
