Texas barbecue restaurant Good Union now open in Richardson

A barbecue restaurant modeled after the smoked meat havens in the Texas Hill Country has opened at the CityLine development in Richardson. Making Central Texas barbecue is a tall order, you might say. Those behind new Good Union Urban Barbeque visited Lone Star State stunners like Smitty's Market, Kreuz Market and Franklin Barbecue to taste from the best.

Good Union Urban Barbeque will sell brisket, pork, sausage, ham, turkey and ribs cooked on an indoor smoker made by J&R Manufacturing. (Why indoor? Good Union will be attached to a 13-story office building, and ventilation was a factor.)

Sides include smoked beans, cole slaw and potato salad.

Despite the hope for Good Union to serve Texas-style barbecue modeled after some of the best-known companies in the state, Good Union won't look or feel like a middle-of-nowhere shop, says Ted Beaman, president of Good Union Urban Barbeque.

"The decor is really going to be more of an urban feel," Beaman explains. "It's going to feel at home in a Richardson or Sundance Square or a Dallas. But from a food stylistic standpoint, it's absolutely going to feel like you're in Lockhart."

The Richardson restaurant will be Good Union's first, but Beaman and his team say they're already shopping in D-FW for restaurant No. 2.

Mike Leatherwood, founder of Good Union Urban Barbeque, will be the pitmaster. Leatherwood and Beaman also work on the corporate side of Bone Daddy's.

The CityLine development is located near North Central Expressway and the President George Bush Turnpike in Richardson and will cost $1.5 billion, The Dallas Morning News reports. CityLine will be host to more than a dozen restaurants, including Kin Kin Urban Thai, grilled cheese shop Tom + Chee, Top Pot doughnuts, pizza place Coal Vines, burger joint Eureka, local chef Kent Rathbun's upscale restaurant Jasper's and many more.

Good Union Urban Barbeque will be located at 1150 State St., Richardson. Open 11 a.m. to 8:30 p.m. daily.
