Mother's Day dining options are as diverse as the women being celebrated. There are classic dishes, including traditional eggs Benedict and roasted prime rib, but there are also squid and shrimp ceviche and Thai tea French toast. CARSO MEDITERRANEAN GRILL

Brunch begins with oatmeal custard with Canadian maple syrup followed by a buffet of starters, including ceviche, hummus and bagels with smoked salmon. Entree choices include grilled filet of beef with fried rice and a chicken shawarma breakfast sandwich on naan with scrambled eggs. For dessert, there will be a buffet of treats, including coconut panna cotta and chocolate crunch cake. CHAMBERLAIN'S STEAK AND CHOP HOUSE 

The prix fixe brunch starts with a choice of soup, salad or appetizer, including stuffed cremini mushrooms and Texas Kobe beef pot stickers. Entrees, including 40-day-aged rib-eye with a farm egg and Texas pecan-fried chicken with house-smoked-bacon waffles, will be served with olive-oil mashed potatoes and roasted asparagus. Dean Fearing's restaurant in the Ritz-Carlton hotel will offer a three-course brunch with choice of starter and a trio of desserts. Main-course options include Georges Bank scallops with field pea and sweet corn risotto and petit lobster omelet with filet mignon and West Texas mop sauce. Get a 360-degree view of Dallas in Reunion Tower's revolving restaurant. Executive chef Patton Robertson's brunch menu will be served buffet-style with stations set up throughout the restaurant. Options include Peking duck, pork belly pot stickers, rendang beef short ribs, sushi, fried rice, lo mein, made-to-order eggs and mini desserts. GRACE 

Start Mother's Day brunch with green eggs and ham. (Poached eggs will be served with salsa verde, which makes them green.) Blythe Beck, the current chef at this "permanent pop-up" restaurant in Trinity Groves, will serve a brunch buffet that includes an omelet station and a dessert station. LARK ON THE PARK 

For brunch and dinner, this restaurant across the street from Klyde Warren Park will offer its regular menu plus holiday specials. The brunch specials are ahi tuna poke with mango, avocado, watercress, cucumber, sweet onion and wasabi vinaigrette for $21 and shirred eggs baked with tomatoes, jalapeños, cilantro and lime creme served with flour tortillas for $15. The dinner special is rack of lamb with English peas, celery root purée, pea tendrils and salsa verde for $42. This pan-Mediterranean spot in North Dallas will serve a three-course, fixed-price brunch for Mother's Day. The menu includes smoked salmon mousse with bacon-wrapped Medjool dates, blueberry pancakes with apricot-almond syrup and thick country bacon, beef tenderloin medallions with rosemary fries and roasted asparagus, and spiced date cake with cardamom ice cream and toffee-caramel. Chef Stephan Pyles' Latin American spot in the Arts District will offer a three-course brunch menu that includes spring squash tamal, squid and shrimp ceviche, fruit-stuffed French toast with walnut syrup, carne asada and eggs with blackberry-habanero salsita, and green eggs and ham, which includes sous-vide egg, Serrano ham, spinach-jalapeño hollandaise and papas de casita.
