Victor Tangos, which was making a big deal about cocktails almost before that was cool, will celebrate its own custom-blended whiskey, created in collaboration with Koval Distillery in Chicago, with a dinner Thursday night, starting at 7. Executive chef Kirstyn Brewer will oversee the four-course meal, which includes cocktail pairings from bartender Matt Ragan. It's $75 a person. Call 214-252-8595 to reserve a spot. Chad McClendon, manager of the Library Bar at the Melrose, is digging Swift Texas Whiskey from Dripping Springs. So is Mr. Dallas after sampling it last week. It's modeled after a Speyside scotch.
