Del Frisco’s Wine Director Chantel Daves battles it out against top women sommeliers from Del Frisco's in New York and Chicago in the inaugural Somm Wars wine competition.

On Thursday, Oct. 27, each sommelier will create unique pairings for a four-course meal at the new Del Frisco’s Double Eagle Steak House in Dallas with a menu prepared by Executive Chef Tony Schwappach. Guests can enjoy a multi-course dinner and wine, curated by each sommelier, and vote for their favorite pairings. A panel of wine experts will judge the competition. The winner of Somm Wars will receive a trophy and bragging rights as Sommelier of the Year.

First Course:
Marinated Texas Sterling Lamb Lollipops with Citrus Bleu du Bocage and Red Jalapeño Glaze

Second Course:
Olive Oil Poached Dover Sole and Sweet and Sour Eggplant, paired with Tandoori Marsala Yogurt Sauce and Crispy Prosciutto

Third Course:
Crispy Duck Confit with Golden Chantrelles and Wilted Dandelion Risotto, which includes Peppered Bacon, Charred Kumato Tomato and Buttered Broth

Fourth Course:
Simply Seared A-7 Wagyu Beef paired with Foie Gras-Charred Leek Ravioli, Rissole Potatoes, and Mission Fig & Black Garlic Reduction

Dessert Course:
Del Frisco’s Style Banana Split, which includes Caramelized Banana, Godiva Chocolate Covered Strawberries and Candied Pecans
