Founder Bob Sambol no longer runs the place, but the original Bob’s, with different ownership than the rest of the chain, has attained the status of a Dallas icon. The dining room is old-fashioned, to be sure, with wooden captain’s chairs and a horse-racing theme. Giant jars of pickles and pickled peppers grace the tables; a giant glazed carrot is the signature garnish with the steaks. This place is all about no-nonsense classics: exemplary martinis, good shrimp cocktails. The signature cuts are a splendid prime cote de boeuf (also known as a bone-in rib-eye) or a prime, bone-in Kansas City strip (also known as a New York strip). Potatoes are included in the price. The front room is the place to see and be seen. In the past, I always wound up in Siberia — one of the dreary back dining rooms. But recently it occurred to me to try requesting a table in the front.
