After a few years of ups and downs, Stephan Pyles’ flagship restaurant in the Dallas Arts District has come roaring back. Its new executive chef, J Chastain, turns out thoughtful, vibrant, seasonal plates whose flavors dance around the edges of Modern Texas cuisine, with South American and Mediterranean influences tossed in the mix. Ceviches are better than ever. Pastry chef Keith Cedotal’s desserts are terrific, too. The restaurant will close at the end of the year in advance of relocating, so now’s the time to go.
