At this modest, 12-seat sushi bar in a strip mall in Fort Worth, Jesus Garcia turns out some of the best sushi in North Texas. The rice is carefully seasoned, the nori crisp, the fish absolutely top-notch. The menu’s limited; take your cue from the daily specials and have a chat with Garcia to hear what else he recommends. If there’s uni (sea urchin roe) and you’re a fan, don’t miss it. The cooked dishes are somewhat less successful than the sashimi and sushi, and the service can be neglectful, but the overall experience is terrific. There’s a small, well-chosen selection of sake at reasonable prices, as well as some excellent Japanese craft beers. (Sake, wine and beer only.) Leslie Brenner/Guide
