This Deep Ellum joint, barely more than a stand, is chef Brian Luscher’s paean to the the hot dog — and other proletarian delights of his native Chicago, such as shaved-beef sandwiches and fried smelts. They’re elevated with top-notch, often local ingredients, plus fine fixings. The signature post oak red hot, beef and pork in a natural casing, is a savory, smoky delight served on a poppy-seed bun with toppings like house-made brown mustard and Lemley’s tomatoes. That beef sandwich is made with Texas Wagyu, no less, dunked in jus and topped with refreshing giardiniera. Wash all this meaty goodness down with one of the dozen or so beers, including several from Texas and Chicago. Beer and wine only. Mark Vamos/Guide
