Order at the cash register, grab a seat at the counter or a table and wait for goodness at this bare-bones spot off Northwest Highway. The specialty, tacos de cabeza al vapor, are tacos featuring steamed cuts of beef head. Both surtida (mixed bits) and chachete (cheek) were excellent, rich but not too, well-seasoned and served shredded in small, doubled corn tortillas warmed on an oiled griddle. Ordered “con todo,” they come topped with chopped onion and cilantro. On the counter you’ll find bins of pickled onion and bright-orange chiles. Beware: It is wicked hot, as is the salsa verde served in squeeze bottles. Spicy with a slow heat that creeps up on you, it’s very good. So are tacos filled with chorizo (not too oily, as chorizo can often be) or lengua. Another specialty: quesadillas made with house-made flour tortillas. I loved the one filled with flor de calabaza (zucchini blossoms) and melted cheese. There’s another location in a Chevron station on Coit Road north of Spring Valley, but the fare at the Community Drive location is superior. Leslie Brenner/Guide
