Handmade flour tortillas are the name of the game at the East Plano place that used to be Aparicio’s Restaurante and Tequila Bar. Now it’s an order-at-the-counter taqueria, featuring mammoth tacos, each wrapped in foil and served in its own red plastic basket. Guisados (stews) are a specialty, and the beef chile verde version is a standout, beautifully spiced, supersaucy, cradling big, tender cubes of beef all wrapped in the warm comfort of a pillowy flour tortilla. There’s a salsa bar in the sprawling dining room, but the guisados need no dressing up. Other tacos impressed, too, including lengua (tongue), rich but not fatty and cut in dice, and carnitas. I’m eager to return for breakfast, as there’s a full line of breakfast tacos along with plates featuring migas, huevos rancheros and more. Leslie Brenner/Guide
