At FM Smoke House in Irving, you can chow down on smoked meats until 11 p.m. six nights a week. Table service? You bet. And the water glass is garnished with a slice of cucumber, a nod not to spa culture, but locavorism. “Cucumbers are native to Texas,” explains co-owner Christi Rudolph. This is the second restaurant for Rudolph and her husband, Brian, who also own the Holy Grail Pub in Plano.

Cuke-garnished water isn’t the only perk at FM Smoke House. The brisket, spicy sausage and pulled pork, smoked over hickory and pecan wood, are served on proper white dinner plates. Why are those fried pickle chips so good? The pickles are hand-sliced, fried to order and served with a zippy dipping sauce.

Meanwhile, the menu goes beyond barbecue into the realm of thoughtfully interpreted Texas traditional dishes. Chef Marcus Cutler turns a generous cut of smoked prime rib into chicken-fried steak; tender smoked chicken and dried tomatoes go into his lively King Ranch chicken.
