Chef Gabriel DeLeon turns out some of the most outstanding Mexican dishes in North Texas, along with excellent New Mexican specialties. I particular love his quesadillas de huitlacoche, made with corn fungus, a Mexican delicacy.

Don’t live in Grapevine? Gabriel DeLeon’s cooking at this shiny, lively spot that opened in 2011 is worth the trip. The menu offers dishes spanning the spectrum of Mexican flavors from Mexico to Texas to New Mexico. If you’ve never tasted huitlacoche, the corn fungus that’s a delicacy in Mexico, this is the place to do it: DeLeon’s quesadillas, layers of house-made blue corn tortillas, roasted vegetables, queso asadero and sautéed huitlacoche, napped with red and green New Mexico chile sauces, are spectacular. So is the huitlacoche, vegetable and cheese-filled chile relleno. There are also a fine cochinita pibíl, a saucy skirt-steak-and-stacked-enchilada affair called New Mexico tampiqueña, and fabulous fajitas. DeLeon does a superb job with all the sauces. The margaritas have greatly improved since Mi Día opened, as has the $12 guacamole, a prodigious, customizable, three-avocado affair made tableside. Leslie Brenner/Guide
