The space that once was once Nana, 27 floors high in the Hilton Anatole hotel, has reopened as Ser. So is this really the “new style of Dallas steakhouse” the hotel promised when it closed Nana? Hard to tell by staring down the menu. Chef Anthony Van Camp is using special UMAi vacuum-sealed bags that purport to simulate dry-aging of cuts like a 22-ounce cowboy ribeye (with tomato chutney, olive oil potatoes and hollandaise sauce), or a 16-ounce New York strip with balsamic shallot reduction. Fish lovers might go for something like loup de mer with pancetta, leeks and a lemon beurre blanc. There are oysters, charcuterie, tempuraed Maine lobster to start, and extras like grilled hen of the woods mushrooms, sweet potato hash, and, you know, good old mac and cheese. Leslie Brenner/Guide
