Four-star sushi chef Jesus Garcia to open ramen house in Richardson

Here's some exciting news for ramen lovers: Jesus Garcia, the gifted chef who helped Fort Worth's Little Lilly Sushi earn four stars in a 2013 review, plans to open a ramen shop in Richardson in the spring.

He writes on his Facebook page:  "Update: planning a ramen restaurant in Richardson at the CityLine development. Just received okay from investors and property managers. Menu is finalized and I am planning on doing an order-at-the-counter style restaurant which should fit that area just right. Working on sourcing ingredients and finalizing job details to create a concrete manual. Aiming for early Spring opening."

Garcia left Little Lilly in 2014 and moved to Seattle, where he worked in a ramen house, aiming to perfect the craft of ramen cooking. Since returning to Dallas in June, he has been working at Sushi Axiom while finalizing the business plan for the ramen shop. Now he's just back from a trip to Japan, where he says he took a week-long ramen-making course in Takamatsu.  The main purpose of the trip, he told me by email, "was to learn about noodle making since I plan on making everything in house."
