Despite what you’ve heard about the sometimes furious Gordon Ramsay, his passion can be contagious, says home cook Cutter Brewer. After appearing on MasterChef in 2014, Brewer has opened his first restaurant in early 2015.
He said MasterChef was a “crash course in culinary school” that gave him the confidence to open Ace’s Ice House and Chop Shop, a new bar and grill in Frisco.
The restaurant is located right next to Toyota Stadium, and Brewer hopes Ace’s might cater to the sports-watching type. (Those three TVs, each 70 inches or larger, will certainly help.)
And “we brag upon our 55-foot bar,” Brewer says. The restaurant seats about 200 people.
He describes the menu as “Texas comfort food” and plans to cook with meats such as venison, duck and quail. Brewer learned on MasterChef to use more inventive ingredients, he says, and so his menu offers quail and waffles instead of the traditional chicken and waffles. He’ll serve venison bites in addition to chicken strips. The menu is still in soft opening phase until the grand opening on Jan. 24.
“I want to bring home-cook comfort food to an elevated level,” Brewer says.
Other additions to the menu will include mac and cheese with pulled pork or lobster; blackened catfish and a crawfish etouffe corn dog.
The restaurant has a subtle garage motif — hence, the “chop shop” in the name. Brewer is executive chef along with Brad Brown, formerly of McCormick & Schmick’s.
Brewer says the Frisco restaurant is a bit of a test. “We are already looking for two more locations already,” he says.
