See how this Dallas vegan chef makes plant-based Cajun 'shrimp and sausage' nachos 

Brandon Waller is the founder and head chef of Bam's Vegan and sells his food at The Shed at the Dallas Farmers Market on the weekends. Waller wants to change the way people view veganism by "leading by example."

"Food is food. Without it having to be so divisive," he says. He wants people to eat vegan food "just like normal food." He doesn't want to "have all these labels and stipulations on it, because at the end of the day, if you're eating food that is good and healthy for you, why look further?"

One of his most popular dishes is his blackened "shrimp and sausage" nachos. The $15 nachos include vegan "shrimp," which is made with konjac root, chopped vegan sausage made with wheat gluten, a coconut milk-based creole cheese sauce, cilantro, tomato, and "sweet heat" remoulade sauce on top of corn tortilla chips.
