The small pizza joint that LSU fan Mitch Rotolo, Sr., opened more than 20 years ago in Baton Rouge, Louisiana, has expanded across Texas, Alabama and Florida. SEC country, right? His new Rotolo's Craft & Crust is expected to open Oct. 1 in Frisco, nowhere near a college football stadium but, rather, right in front of FC Dallas' soccer stadium.

"We want to be in the middle of the neighborhood," Rotolo explains. He wants to serve "Little League teams on the weekends, and grownups and college kids and millennials for football nights ... and on date night."

He opened that first Rotolo's at LSU when he was 24 years old. "I had 35 draft beers in 1997," Rotolo says, "people thought I was nuts. That really built our brand of being a true pizza pub."

The company has changed over the years, with the addition of franchises, but Rotolo believes the heart of Rotolo's remains: It's a pizza restaurant with a big beer selection.

Frisco is technically Texas' first Rotolo's Craft & Crust, though Rotolo's Pizzerias currently exist in Lewisville, Longview, Tyler and Beaumont. The Craft & Crust version of the restaurant has a "newer look," Rotolo says, "and a few more [menu] offerings."

Barian McGuire, an LSU grad and Frisco resident, operates the new D-FW restaurant with his wife Amber McGuire. They "get" the Rotolo's brand, Rotolo says, and they are likely to open more Rotolo's in the coming years in North Texas.

Rotolo's son, Mitch Rotolo, Jr., is also involved in the parent company. He travels the world doing food competitions and has medaled for the past five years at the World Pizza Games.

"We are really excited to introduce our new prototype to Texas and the D-FW area," Barian McGuire says in a statement.

Rotolo's Craft & Crust is located at 9250 North Dallas Parkway, Suite 130 (near Main Street), Frisco. It opened Oct. 1, 2018.
