Restaurateurs behind HG Sply Co. in Dallas & Fort Worth open eatery in Rockwall

Are you gluten-free? Paleo? At Standard Service, a new restaurant now open in Rockwall, it's OK if you have dietary restrictions.

And it's OK if you don't, too. There are waffle fries and fried chicken on the menu, too.

Standard Service comes from 8020 Hospitality, the restaurant group that operates the exceptionally popular HG Sply Co. on Greenville Avenue in Dallas and its next-door neighbor Remedy. The company sprouted a new HG Sply Co. in Fort Worth in August.

A press release describes Standard Service as a "casual neighborhood restaurant/bar" with modern Texas food. There's Frito pie on the menu, though this one's made with bison instead of beef. There's lasagna, with noodles made from zucchini. Bowls similar to those at HG Sply Co. offer a low-carb way to eat veggies and protein.

Chef Danyele McPherson says her menu is inspired by the days "when you didn't have to check for ingredients you can't pronounce, and the people who made your food were also your neighbors."

Standard Service will have "a vintage feel with modern touches," says owner Elias Pope.

And here's something fun: The bar will feature five cocktails created by and named after local folks. A dollar per drink will be donated to the namesake's charity of choice. Each month, the least popular cocktail will be replaced with a new one.
