Back Home BBQ back open for business on Ross Avenue in Dallas

The founders of Back Home BBQ spent 20 mornings in a row eating brisket. They obsessed over thermodynamic charts and scrutinized the bark, smoke ring, flavor and texture of the beef.

It was an "enormous soul-searching quest," says Jeff Wells, one of the six founders. "We got the meat sweats a lot."

They think they have the brisket right now. It's one of the five meats they sell at the new Back Home BBQ, a Ross Avenue restaurant that re-opened Nov. 4. It originally opened in February 2015, but the owners closed it for a "reboot" which involved redoing the food, refurbishing the smoker and changing the decor.

Some 10 years ago, the same founders started Company Cafe, described online as "clean comfort food with a gluten-free twist." Many of the items at their new Back Home BBQ are gluten free, though it's not the focus.

Back Home's cooks work on a J&R smoker -- made by the Mesquite-based company that's supplied smokers and grills to Dallas chefs Kent Rathbun and John Tesar and even the Saudi royal family and the Mondavi wine family.

Sides are mac and cheese, confetti coleslaw, collard greens, navy beans, bacon-cheddar mashed potatoes, corn bread and potato salad "that tastes like a deviled egg," Wells says.

The restaurant, which used to be a drive-through Chinese restaurant where its owners lived upstairs, now has room for 50 people inside, 40 on the Astroturf patio.

The founders believe the location on Ross Avenue, just two miles from downtown and two miles from Uptown, is the next hot spot.

'We wanted to be part of this resurgence of Ross Avenue,' Wells says. 'Lower Greenville is almost tapped out, so it's going to be heading this way.'
