First Tokyo Joe's restaurant in Texas now open; many more coming

If you've never seen a Tokyo Joe's before, that's about to change.

The first in Texas is now open in Richardson, but the company has plans for five more in the next 18 months: in The Colony, Las Colinas, Fort Worth, Frisco and Arlington.

Tokyo Joe's is a fast-casual Asian restaurant that sells sushi; salads; and bowls stuffed with rice, veggies and meat. The focus is on "healthy preparation," said Chad Corrigan, vice president of brand expansion for Tokyo Joe's, in a November 2014 interview.

What does 'healthy' mean? Nothing is fried.

Two of the special-to-Texas menu items include the "Texas roll" -- a sushi roll with shrimp, steak, red onion, cilantro, avocado and cucumber. The Lone Star State restaurants will also have a special surf and turf dish of steak, shrimp and sauteed veggies topped with teryiaki sauce and served with rice.

Sushi rolls start at $4 for four pieces and go up to $7 for eight pieces. Bowls cost $5.50 to $9.75.
