Beverage concept manager Matt Tanner has crafted two new cocktails that evoke the heat and passion of summer with bright colors and full flavors. The Pimm's Cup No. 3 contains Pimm's No. 1, gin, cucumber, blueberry, lemon, lime and tonic; the Champagne Swizzle serves up sparkling wine with apple, cinnamon, mint and Angostura bitters. The cocktails are available through the end of summer for $12 apiece.

This California-based restaurant chain opened its first Texas outpost in Dallas last month. The happy hour menu recently made its debut, and it's quite lengthy. Some highlights: wine selections at $5, $9 and $13 price points; $5 beer options that include a rotating Texas brew; and a list of select cocktails priced at $5 (including Meyer Lemon Drops and mojitos) and $9 (a Peligroso Blanco Margarita). Light bites are also on the menu. Indulge in the specials daily from 3 to 8 p.m.

This restaurant that serves recipes from Mexico and New Mexico along with Tex-Mex favorites uses the juice of lemons in its margaritas. The reason: The flavor profile of lemons is consistent, while that of limes changes with the seasons. The lounge at Eddie V's is celebrating the Sparkling Days of Summer nightly through the end of August with live jazz tributes accompanied by food and drink specials. Six sparkling cocktails have been created for the occasion and will go for $10 a pop. Among the sparklers: Cuban Nights with Real McCoy rum, lime, mint and Chandon Brut; Tokyo Margaritas with Casamigos Blanco, Nagomi yuzu, lime and agave; and the 24 Karat with Belvedere, Grand Marnier, raspberries, peach and Chandon Rosé. Try them out Sundays through Thursdays from 6 to 10 p.m. and Fridays and Saturdays from 7 to 11 p.m.
