Tim Love's braised oryx and pickled vegetable taco was the winning dish at the Austin Food & Wine Festival.

Tim Love of Fort Worth, whose restaurants include Lonesome Dove Western Bistro, Woodshed Smokehouse and Queenie's Steakhouse, beat a dozen other celebrity chefs Saturday at the Austin Food & Wine Festival. His winning entry: a fried beef tendon taco, made of braised oryx and pickled vegetables. It was garnished with edible flowers in a fried beef tendon shell.

Judges for the Rock Your Taco showdown included Graham Elliot, a Chicago chef; Gail Simmons of Bravo's Top Chef , and Andrew Zimmern, a national TV personality.

Love also headlined a how-to-grill demonstration on the festival grounds, offering tips to a swarm of spatula-armed ticket-holders working over portable grills. He recently announced the opening of Lonesome Dove Austin, expected this summer, his first eatery in the capital city.
