Midwest pizza company Spin slices into D-FW market

Spin is like a coffee shop, says partner Gail Lozoff, but it serves pizza.

What she means is: Patrons of Spin tend to come and stay awhile. They often run into friends or neighbors. "People can hang for hours with a glass of wine or beer," Lozoff says. Or they can call in, grab pizza to go and be on their way.

Kansas City-based Spin cooks Neapolitan-style pizzas modeled after pies made in southern Italy. Pizzas are cooked in a hot oven with roasted vegetables on top. Crust is thin and bubbly and a little chewy, Lozoff explains.

Spin will not apply for special certification from the Associazione Vera Pizza Napoletana.

When the partners decided to expand their business to Texas, Dallas was the natural first step.

"There's a good feeling and connection there," Lozoff says of her "gut" feeling toward Dallas-Fort Worth. "Dallas is a growing market and has such a great reputation for being a food-loving market."

Four restaurants are expected to open in D-FW.

They are: Richardson, opening April 11; Southlake in late May, Las Colinas in June; and SMU late this summer.

Patrons eating at the casual, family-friendly restaurants will order at the counter. The staff brings out pizzas and drinks to each table.

Some of the pizzas will get a "Texas" treatment with toppings such as jalapeños or barbecue sauce. The Dallas-area menu is still being developed by James Beard Award-winning chef Michael Smith;

Spin also sells gelato -- a popular after-dinner treat enjoyed especially by kids, Lozoff says.
